Chef Mark Antoine Foster was born in New Orleans, Louisiana. He began his career in culinary arts at sixteen years old. He started out as a line cook for a Denny's Restaurant. Later he had the opportunity to work with Chef Paul Prudhomme for a little while before he joined the U.S. Navy in 1977. He met and started training with Chef Paul at the Maison Duprey Hotel. Thereafter he worked with him for a couple of years learning how to prepare gourmet food.
To mention, Chef Paul Prudhomme was considered the king of Cajun-Creole cooking long before Emerald Laggasi. Chef Paul and his wife have some of the best cookbooks on the market, and they have made numerous television appearances. Chef Paul has a line of creole spices on the market as well in the U.S. and abroad.
Over the span of 40 years, Chef Mark Antoine has worked at major hotels and various restaurants in New Orleans and California.
In 1996 he opened Cafe Nawlins, a small Cajun-Creole restaurant in Burbank, California. The restaurant received praise from major newspapers and magazines critics from the Los Angeles Times, Daily News, Los Angeles Times Magazine, Valley Magazine and others. The Chef's Gumbo was rated one of the top 50 dishes by Los Angeles Times Magazine and Cafe Nawlins was rated one of the top 10 restaurants in the San Fernando Valley by the Los Angeles Time Valley Edition.
Chef Mark Antoine has catered for local business in Los Angeles, including the movie industry in Burbank, CA. Over the last 15 years he has resided in San Diego area and has worked as a consultant and chef for various restaurants and hotels and is now working as a personal chef.
